Deli Spices Kitchen Academy

Birria

Consistent birria. Every batch.

The Deli Spices Foodservice System is designed to make authentic birria easier to prepare at scale—without measuring multiple spices or depending on one person to get the seasoning right.

What You’ll Need

  • Beef

  • Deli Spices Birria Seasoning

  • Water

  • Cooking pot, slow cooker, or commercial cooking equipment

The Ratio

1 lb of meat = 1 scoop of Deli Spices

1 scoop = 20 g of seasoning

For larger batches:

Meat Deli Spices Birria
1 lb 20 g
5 lb 100 g
10 lb 200 g
25 lb 500 g
50 lb 1 kg

Easy rule: however many pounds of meat you're cooking, use the same number of scoops.

How to Make It

Step 1 — Add the Meat

Place your beef into your cooking pot or equipment.

Trim or portion the meat according to your restaurant's normal preparation process.

Step 2 — Add Deli Spices

Add 1 scoop of Deli Spices Birria for every 1 lb of meat.

No additional spices are required.

Step 3 — Add Water

Add enough water to properly cover and cook the meat according to your kitchen's desired birria consistency.

For a richer consommé, use less water. For a lighter broth or higher broth yield, adjust the water accordingly.

Step 4 — Cook

Cook until the beef is completely tender and easily pulls apart.

Cooking time will vary depending on the amount of meat and equipment being used.

Once tender, shred or portion the meat and return it to the consommé as needed.

Step 5 — Serve

Your birria is ready.

Use it for:

  • Birria tacos

  • Quesabirria

  • Birria plates

  • Birria ramen

  • Consommé

  • Your restaurant's own creations

Tips for Better Results

Mix Before Serving

Stir the consommé well before portioning so the seasoning and flavors remain evenly distributed.

Keep the Ratio Consistent

For consistent results between cooks and shifts, always start with:

1 lb meat = 1 scoop

Scaling Up?

Don't change the formula.

10 lb of meat → 10 scoops
25 lb of meat → 25 scoops
50 lb of meat → 50 scoops

That's the whole idea.

Frequently Asked Questions

Do I need to add other seasonings?

No. Deli Spices Birria is designed as a complete seasoning system. Additional ingredients can be added if your restaurant wants to create its own signature variation.

Can I prepare large batches?

Yes. The same ratio can be scaled from a small test batch to full commercial production.

Can I make the birria stronger or milder?

Yes. Start with the recommended ratio for consistency. Once you've established your restaurant's preferred flavor profile, the amount of seasoning or water can be adjusted.

What type of beef should I use?

Use the cut that works best for your operation, food cost, and desired texture. Cuts suitable for slow cooking and shredding generally work best.

Can I prepare it ahead of time?

Yes. Birria works well for batch preparation. Follow your restaurant's food-safety procedures for cooling, storage, reheating, and hot holding.

What if my batch tastes different from yesterday?

First check the three variables that most commonly change:

Meat weight → Seasoning amount → Water amount

Keeping these consistent is the easiest way to maintain the same flavor from batch to batch.
